Mediterranean Chickpea Salad Bowl
Ingredients:
1 cup Chickpeas (cooked or canned, drained and rinsed)
1/2 Avocado (diced)
4 Cherry Tomatoes (halved)
1/2 Cucumber (diced)
2 Soft-Boiled Eggs (halved)
2 tbsp Feta Cheese (crumbled)
1 tbsp Fresh Parsley (chopped)
1 tbsp Olive Oil (for drizzling)
Salt and Pepper (to taste)
Red Chili Flakes (optional, for garnish)
Instructions:
Prepare the Eggs:
Soft-boil the eggs by cooking them in boiling water for 6-7 minutes. Cool in ice water, then peel and halve.
Assemble the Bowl:
Start by placing the chickpeas in your bowl.
Add diced avocado, halved cherry tomatoes, and diced cucumber around the chickpeas.
Top with Eggs and Cheese:
Place the soft-boiled egg halves on top of the salad.
Sprinkle with crumbled feta cheese and chopped parsley.
Season and Serve:
Drizzle with olive oil.
Season with salt, pepper, and optional red chili flakes for a bit of heat.
