Meatball Boats

Ingredients:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 4 hoagie rolls
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
  4. In a skillet over medium heat, brown the meatballs on all sides. This step is to give them a nice sear, but they don’t need to be fully cooked as they’ll finish in the oven. Once browned, set aside.
  5. Cut a hollow space in the center of each hoagie roll to create a “boat.”
  6. Place the hoagie rolls on a baking sheet. Spoon a little marinara sauce into each roll.
  7. Arrange the meatballs in the hollowed-out portion of each roll.
  8. Pour the remaining marinara sauce over the meatballs, and sprinkle shredded mozzarella cheese on top.
  9. Bake in the preheated oven for about 15-20 minutes or until the meatballs are cooked through, and the cheese is melted and bubbly.
  10. Remove from the oven, garnish with fresh basil leaves, and serve your meatball boats hot.
