Ingredients:
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 pinch of salt
- 1 large egg
- 1 tablespoon apricot jam
- 1 tablespoon melted butter
- 1 teaspoon vinegar
- 1 cup milk
For the Sauce:
- 1 cup heavy cream
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup hot water
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (180°C) and grease a baking dish.
- In a large mixing bowl, combine flour, sugar, baking soda, and a pinch of salt.
- In a separate bowl, beat the egg and add apricot jam, melted butter, vinegar, and milk. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Pour the batter into the greased baking dish and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, prepare the sauce. In a saucepan, combine heavy cream, sugar, butter, hot water, and vanilla extract. Bring to a gentle boil, stirring continuously until the sugar has dissolved.
- Once the pudding is out of the oven, immediately pour the hot sauce over it, allowing it to soak in.
- Allow the Malva Pudding to rest for a few minutes before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
