  • 3 tablespoons butter
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Juice of 1 lemon
  • Zest of 1/2 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Lemon slices for serving

Instructions:

  1. Prep the Ingredients:
    • Rinse the shrimp and pat dry with paper towels. Season with salt, pepper, and half the Italian seasoning.
    • Prepare the asparagus by trimming the woody ends and cutting them into 2-inch pieces.
  2. Cook the Asparagus:
    • In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the asparagus and cook for 4-5 minutes until tender but still slightly crisp. Season with salt and pepper. Once cooked, transfer to a plate and set aside.
  3. Cook the Shrimp:
    • In the same skillet, add another tablespoon of butter. Add the garlic and red pepper flakes and sauté for about 1 minute until fragrant.
    • Add the shrimp to the skillet, spreading them out evenly. Cook without moving them for about 1-2 minutes on one side, then flip and cook until fully pink and cooked through.
  4. Combine and Finish:
    • Add the last tablespoon of butter, lemon juice, lemon zest, and the remaining Italian seasoning. Stir everything to coat the shrimp in the sauce.
    • Return the asparagus to the skillet and toss to heat through and coat in the sauce.
  5. Serve:
    • Taste and adjust seasoning if necessary. Garnish with freshly chopped parsley and lemon slices. Serve immediately.

Tips:

  • Ensure not to overcook the shrimp; they cook quickly and can become tough if left too long on the heat.
  • You can serve this with a side of pasta, rice, or a simple salad for a complete meal.
