Keto-Friendly Cauliflower Fried Rice

 

Ingredients:

  • 1 medium head of cauliflower
  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 1/2 cup green peas (optional, omit if you want to reduce carbs further)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce or tamari (for gluten-free option)
  • 2 green onions, chopped, for garnish
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. Prepare the Cauliflower Rice:
    • Rinse the cauliflower head and pat it dry. Remove the leaves and core.
    • Cut the cauliflower into florets and place them in a food processor.
    • Pulse the cauliflower until it resembles rice or couscous-sized pieces. Be careful not to over-process; you don’t want it to turn into mush.
    • Alternatively, you can grate the cauliflower using a box grater.
  2. Cook the Vegetables:
    • Heat 1 tablespoon of oil in a large skillet or wok over medium heat.
    • Add the minced garlic and chopped onion. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
    • Add the diced carrots and cook for another 2-3 minutes until they start to soften.
    • If using peas, add them to the skillet and cook for an additional 1-2 minutes.
  3. Cook the Cauliflower Rice:
    • Push the vegetables to one side of the skillet and add the remaining tablespoon of oil to the empty space.
    • Add the cauliflower rice to the skillet and stir to combine with the vegetables.
    • Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  4. Add Eggs and Seasonings:
    • Push the cauliflower rice to one side of the skillet, creating a well in the center.
    • Pour the beaten eggs into the well and let them cook for a minute until they start to set.
    • Scramble the eggs with a spatula until cooked through, then mix them into the cauliflower rice.
    • Stir in the soy sauce or tamari, ensuring it’s evenly distributed throughout the dish.
    • Season with salt and pepper to taste.
  5. Garnish and Serve:
    • Remove the skillet from heat and garnish the cauliflower fried rice with chopped green onions and sesame seeds, if desired.
    • Serve hot as a delicious and satisfying keto-friendly meal or side dish.
