Ingredients:
- 1 medium head of cauliflower
- 2 tablespoons olive oil or avocado oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 carrots, diced
- 1/2 cup green peas (optional, omit if you want to reduce carbs further)
- 2 eggs, beaten
- 3 tablespoons soy sauce or tamari (for gluten-free option)
- 2 green onions, chopped, for garnish
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions:
- Prepare the Cauliflower Rice:
- Rinse the cauliflower head and pat it dry. Remove the leaves and core.
- Cut the cauliflower into florets and place them in a food processor.
- Pulse the cauliflower until it resembles rice or couscous-sized pieces. Be careful not to over-process; you don’t want it to turn into mush.
- Alternatively, you can grate the cauliflower using a box grater.
- Cook the Vegetables:
- Heat 1 tablespoon of oil in a large skillet or wok over medium heat.
- Add the minced garlic and chopped onion. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
- Add the diced carrots and cook for another 2-3 minutes until they start to soften.
- If using peas, add them to the skillet and cook for an additional 1-2 minutes.
- Cook the Cauliflower Rice:
- Push the vegetables to one side of the skillet and add the remaining tablespoon of oil to the empty space.
- Add the cauliflower rice to the skillet and stir to combine with the vegetables.
- Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Add Eggs and Seasonings:
- Push the cauliflower rice to one side of the skillet, creating a well in the center.
- Pour the beaten eggs into the well and let them cook for a minute until they start to set.
- Scramble the eggs with a spatula until cooked through, then mix them into the cauliflower rice.
- Stir in the soy sauce or tamari, ensuring it’s evenly distributed throughout the dish.
- Season with salt and pepper to taste.
- Garnish and Serve:
- Remove the skillet from heat and garnish the cauliflower fried rice with chopped green onions and sesame seeds, if desired.
- Serve hot as a delicious and satisfying keto-friendly meal or side dish.
