Ingredients:
- 8 oz fettuccine or pappardelle noodles
- 2 tablespoons olive oil
- 1 lb Italian sausage, casings removed
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup dry red wine (like Chianti)
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil for garnish
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through.
- Add the sliced onion and minced garlic to the skillet. Sauté until the onion is translucent.
- Stir in the bell pepper and cherry tomatoes. Cook for 2-3 minutes until the vegetables are slightly softened.
- Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
- Season with dried oregano, dried basil, salt, and black pepper. Let the mixture simmer for 5-7 minutes.
- Add the cooked pasta to the skillet and toss to coat in the flavorful sauce.
- Serve hot, garnished with grated Parmesan cheese and fresh basil.
