Hearty Hamburger Cabbage Soup
Ingredients:

1 lb ground beef

1/2 medium head of green cabbage, roughly chopped

1 medium onion, diced

2 large carrots, peeled and diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (undrained)

4 cups beef broth

1 tbsp tomato paste (optional, for a richer broth)

1 tsp Italian seasoning (or a mix of oregano and basil)

Salt and black pepper to taste
Instructions:

Brown the Meat: In a large pot or Dutch oven, cook the ground beef and diced onion over medium-high heat until the beef is no longer pink. Drain any excess grease.

Add Aromatics: Stir in the minced garlic and cook for about 1 minute until fragrant.

Combine the Rest: Add the chopped cabbage, carrots, diced tomatoes with their juices, beef broth, tomato paste, and Italian seasoning. Stir well to combine.

Simmer: Bring the soup to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 to 25 minutes, or until the cabbage and carrots are completely tender.
