Hearty Hamburger Cabbage Soup

Ingredients:

  • 1 lb ground beef

  • 1/2 medium head of green cabbage, roughly chopped

  • 1 medium onion, diced

  • 2 large carrots, peeled and diced

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes (undrained)

  • 4 cups beef broth

  • 1 tbsp tomato paste (optional, for a richer broth)

  • 1 tsp Italian seasoning (or a mix of oregano and basil)

  • Salt and black pepper to taste

Instructions:

  1. Brown the Meat: In a large pot or Dutch oven, cook the ground beef and diced onion over medium-high heat until the beef is no longer pink. Drain any excess grease.

  2. Add Aromatics: Stir in the minced garlic and cook for about 1 minute until fragrant.

  3. Combine the Rest: Add the chopped cabbage, carrots, diced tomatoes with their juices, beef broth, tomato paste, and Italian seasoning. Stir well to combine.

  4. Simmer: Bring the soup to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 to 25 minutes, or until the cabbage and carrots are completely tender.

  5. Season and Serve: Taste the broth and add salt and pepper as needed. Serve hot!
