1 cup (90 g) oats (quick oats or rolled oats)
1 cup (240 ml) water
2 eggs
2 ripe bananas, mashed
1 tablespoon cocoa powder
1 teaspoon baking powder
1 tablespoon stevia sweetener (or sweetener of choice)
1 teaspoon vanilla extract
1 tablespoon coconut flakes
A pinch of salt
For Topping:
Chopped almonds
Sugar-free chocolate syrup (optional)

1. Soak the Oats
Place the oats and water in a large bowl.
Stir and let them rest for 10 minutes so the oats soften and absorb the water.
2. Prepare the Banana Mixture
In another bowl, mash the bananas until smooth.
Add:
Eggs
Sweetener
Vanilla extract
Salt
Whisk until fully combined.
3. Combine the Mixtures
Pour the banana mixture into the soaked oats and mix well.
Sift in:
Cocoa powder
Baking powder
Add coconut flakes.
Stir gently until the batter is smooth and evenly mixed.
4. Prepare for Baking
Preheat oven to 180ยฐC (350ยฐF).
Lightly grease a muffin tin or use silicone or paper liners.

Sprinkle chopped almonds on top.
