Greek Yogurt Chicken Salad
I’ve been hooked on this one — lighter but still super satisfying. Definitely one I keep on repeat!
Ingredients:
  • 1 pound cooked chicken breast, diced
  • ½ cup plain Greek yogurt (instead of mayo)
  • ¼ cup chopped cucumber
  • ¼ cup chopped red onion
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: a few olives or fresh dill
Instructions:
  • In a large bowl, combine diced chicken, Greek yogurt, cucumber, onion, feta, lemon juice, and oregano.
  • Mix everything until well coated.
  • Season with salt and pepper to taste.
  • Chill in the fridge for 30 minutes so the flavors blend together.
  • Serve in lettuce wraps, with low-carb pita, or just eat it straight from the bowl.
