Golden Baked Feta Rolls with Sweet Cranberry Honey

Ingredients

For the Rolls

  • 8 sheets phyllo pastry, thawed
  • 8 oz feta cheese, cut into small rectangles
  • 2 tbsp butter, melted
  • 1 tsp dried thyme or oregano
  • 1 tbsp honey (for brushing inside, optional)

For the Sweet Cranberry Honey

  • 3 tbsp honey
  • 2 tbsp cranberry sauce or pureed cranberries
  • ½ tsp lemon juice

Optional Garnish

  • Fresh thyme or rosemary
  • Crushed pistachios or walnuts

Directions

Preheat oven

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

Prepare the phyllo

Lay one sheet of phyllo flat and brush lightly with melted butter. Place a second sheet on top and brush again.

Fill the rolls

Place a piece of feta near one edge of the phyllo. Sprinkle with dried thyme and drizzle lightly with honey if using. Roll tightly into a cylinder and tuck ends underneath. Repeat for remaining rolls.

Bake

Place rolls on the prepared baking sheet and brush tops with remaining melted butter. Bake 12–15 minutes until golden and crisp.

Make the cranberry honey drizzle

In a small saucepan, gently warm honey and cranberry sauce with lemon juice until smooth and slightly thickened.

Serve

Drizzle baked feta rolls with sweet cranberry honey and garnish with fresh herbs and nuts if desired. Serve warm.
