INGREDIENTS:

  • 6 cups shredded hash brown potatoes
  • 2 cups cheddar cheese
  • 2 cups bacon, diced
  • ¼ cup green onion, sliced
  • 4 eggs
  • ¾ cup milk
  • 2 Tablespoons Dijon mustard
  • Salt and pepper, to taste
  • ½ cup sour cream

INSTRUCTIONS:

  1. Preheat the oven to 350°F (180°C). Grease a 3-quart baking dish with nonstick cooking spray. Arrange potatoes evenly in the bottom of the dish.
  2. Sprinkle with the bacon, 1 cup of cheddar cheese, and green onions.
  3. In the bowl, whisk eggs, salt and pepper, milk, sour cream, and Dijon mustard.
  4. Pour egg mixture over the hash browns.
  5. Sprinkle with remaining shredded cheese and bake uncovered for 40-45 minutes or until a knife inserted near the center comes out clean.
