Eggplants stuffed with minced meat: An easy and delicious recipe
Ingredients
2 eggplants
300g of minced meat
1 onion
2 cloves of garlic
150g of crushed tomatoes
100g of grated cheese
2 tablespoons of olive oil
salt to taste
pepper to taste
1 teaspoon of sweet paprika
Instructions
Cut the eggplants in half and remove some of the pulp.
Chop the onion and garlic and sauté them in a pan with olive oil.
Add the ground meat and cook until browned.
Add the crushed tomatoes, eggplant pulp, salt, pepper, and paprika. Cook for 10 minutes.
Fill the eggplant halves with the meat mixture.
Sprinkle the grated cheese on top.
Bake at 180°C for 25 minutes.
Notes
You can add herbs like oregano or basil for more flavor.
