Dreamy Cream Cheese Chocolate Pound Cake
This recipe creates a dense, velvety crumb thanks to the cream cheese, and using a high-quality dark chocolate makes all the difference in the depth of flavor.
Ingredients
For the Cake:

Dark Chocolate: 2 ounces, chopped

Baking Powder & Salt: 1/2 tsp baking powder + 1/4 tsp salt

Butter: 1/2 cup (1 stick) unsalted, softened

Cream Cheese: 4 ounces, softened

Sugar: 1 1/4 cups granulated sugar

Eggs: 3 large, room temperature

Vanilla: 1 teaspoon vanilla extract
For the Chocolate Glaze:

4 ounces dark chocolate, chopped

1/2 cup heavy cream
Instructions

Prep: Preheat your oven to 325°F (165°C). Grease and flour a standard loaf pan (approximately 9×5 inches).

Melt Chocolate: Melt the 2 ounces of chopped chocolate in the microwave in 20-second bursts, stirring until smooth. Set aside to cool slightly.

Dry Ingredients: In a medium bowl, whisk together the flour, xanthan gum, cornstarch, cocoa powder, baking powder, and salt.

Cream Butter & Cheese: In a large bowl or stand mixer, beat the softened butter and cream cheese together until smooth. Add the sugar and beat on high speed for about 3–4 minutes until very light and fluffy.

Add Eggs: Add eggs one at a time, beating well after each addition. Mix in the melted chocolate and vanilla extract.

Combine: Turn the mixer to low and gradually add the dry ingredients. Mix just until combined—do not overmix, or the cake may become too dense.

Bake: Pour the batter into the prepared pan. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean (or with just a few moist crumbs).
