Cucumber Avocado Toast with Scrambled Eggs

Ingredients:
For the Avocado Toast:
2 slices whole-grain or sourdough bread
1 ripe avocado
1/2 lime, juiced
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder (optional)
6-8 cucumber slices
For the Scrambled Eggs:
2 large eggs
1/2 tbsp butter or olive oil
1/4 tsp salt
1/4 tsp black pepper
Step by Step:
Toast the Bread:
Toast the bread slices in a toaster or pan until golden and crispy.
Prepare the Avocado Mash:
In a small bowl, mash the avocado with lime juice, salt, black pepper, and garlic powder (if using).
Assemble the Toast:
Spread the avocado mash evenly on the toasted bread.
Top with fresh cucumber slices for a crisp contrast.
Make the Scrambled Eggs:
Heat butter or olive oil in a non-stick pan over low-medium heat.
Crack eggs into the pan and let them sit for a few seconds.
