Crispy Cheese Potato Quesadilla Recipe

 

Ingredients:

  • 2 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup diced green onions
  • Sour cream and salsa for serving

Instructions:

  1. Boil the diced potatoes until fork-tender. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the boiled potatoes, garlic powder, paprika, salt, and pepper. Cook until the potatoes are golden and crispy on the edges. Remove from heat.
  3. Place a flour tortilla in a clean skillet over medium heat. Sprinkle a portion of shredded cheddar cheese on one half of the tortilla.
  4. Spoon a generous portion of the crispy potatoes over the cheese and sprinkle with diced green onions.
  5. Fold the tortilla in half, pressing gently with a spatula. Cook until the cheese is melted and the tortilla is golden brown, then flip and cook the other side.
  6. Repeat with the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot with sour cream and salsa on the side.
