Ingredients:
- 2 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup diced green onions
- Sour cream and salsa for serving
Instructions:
- Boil the diced potatoes until fork-tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the boiled potatoes, garlic powder, paprika, salt, and pepper. Cook until the potatoes are golden and crispy on the edges. Remove from heat.
- Place a flour tortilla in a clean skillet over medium heat. Sprinkle a portion of shredded cheddar cheese on one half of the tortilla.
- Spoon a generous portion of the crispy potatoes over the cheese and sprinkle with diced green onions.
- Fold the tortilla in half, pressing gently with a spatula. Cook until the cheese is melted and the tortilla is golden brown, then flip and cook the other side.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot with sour cream and salsa on the side.
