Creamy Carbonara Pasta

Ingredients:

  • 400g spaghetti
  • 200g pancetta or guanciale, diced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. In a bowl, whisk together eggs, Parmesan cheese, salt, and black pepper. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced pancetta or guanciale. Cook until the meat is crispy and golden brown.
  4. Add the cooked and drained spaghetti to the skillet, tossing to coat it in the rendered fat.
  5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta. Toss vigorously to combine, using the reserved pasta water to achieve a creamy consistency.
  6. Garnish with chopped fresh parsley and additional Parmesan cheese.
  7. Serve immediately, and enjoy your creamy Carbonara!
