Ingredients

  • The Mix: * 1 medium zucchini, grated (squeeze out excess water)

    • 1 large carrot, grated

    • 1 cup shredded cheese (mozzarella or cheddar)

    • 2 large eggs

    • A handful of chopped green onions

    • Salt and black pepper to taste

  • The Base:

    • Tortillas, spring roll wrappers, or a thin flour batter (crepe style)

  • For Frying: 2 tbsp vegetable oil


Instructions

  1. Prep the Veggies: Grate the zucchini and place it in a clean kitchen towel. Squeeze firmly to remove as much liquid as possible—this prevents the rolls from getting soggy.

  2. Make the Filling: In a large bowl, combine the squeezed zucchini, grated carrots, shredded cheese, chopped green onions, and eggs. Season with salt and pepper. Mix until well combined.

  3. Assemble: * Place a generous amount of the mixture onto your wrap of choice.

    • Roll them up tightly, tucking in the sides like a burrito or a spring roll.

  4. Cook: Heat oil in a large skillet over medium heat. Place the rolls seam-side down first to seal them.

  5. Golden Finish: Fry for 3–4 minutes per side until the outside is golden brown and crispy, and the cheese inside has melted.


Pro Tip

If you want them extra crispy without the extra oil, you can brush them with a little butter and pop them in the air fryer at 200°C for 8–10 minutes.
