– 2 cups all-purpose flour
– 1 tsp baking soda

– 1 tsp ground cinnamon

– 1/2 cup granulated sugar
– 1/2 cup brown sugar
– 1/2 cup vegetable oil (or melted butter)
– 3 large eggs
– 2 cups grated carrots (about 3–4 medium carrots)
– 1 cup raisins
– 1/2 cup chopped walnuts or pecans (optional)
Instructions
1. *Preheat* oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. *Mix dry ingredients*: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. *Mix wet ingredients*: In another large bowl, beat sugars and oil (or butter) until smooth. Add eggs one at a time, mixing well.
4. *Combine*: Gradually add the dry mix to the wet mix, stirring just until incorporated.
5. *Add carrots & raisins*: Fold in grated carrots, raisins, and nuts (if using).
6. *Bake*: Pour batter into the prepared pan. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
7. *Cool*: Let the loaf cool in the pan 10 minutes, then transfer to a wire rack to cool completely before slicing.

– You can soak raisins in warm water for 10 minutes and drain them for extra plumpness.
