Ingredients:

For the Spring Rolls:

  • 12-15 spring roll rice paper wrappers
  • 1 cup cooked and shredded chicken (or shrimp, tofu, or your choice of protein)
  • 1 1/2 cups vermicelli rice noodles, cooked and cooled
  • 1 cup lettuce leaves, thinly sliced
  • 1 cup bean sprouts
  • 1 cup cucumber, julienned
  • 1/2 cup carrots, julienned
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves

For the Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • 1-2 tablespoons water (for thinning, if needed)

Instructions:

For the Spring Rolls:

  1. Prepare all your ingredients and have them ready for assembly. This includes the cooked and shredded chicken, vermicelli rice noodles, sliced lettuce, bean sprouts, julienned cucumber, julienned carrots, cilantro, mint, and basil leaves.
  2. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Be careful not to over-soak it, as it can tear easily.
  3. Place the softened rice paper wrapper onto a clean, damp kitchen towel or a plate.
  4. Near the center of the wrapper, place a small amount of shredded chicken (or your choice of protein), followed by a small portion of vermicelli rice noodles, lettuce, bean sprouts, cucumber, carrots, cilantro, mint, and basil leaves.
  5. Fold the sides of the wrapper over the filling, then fold the bottom of the wrapper up and over the filling. Roll tightly from the bottom to the top, sealing the spring roll.
  6. Repeat the process with the remaining rice paper wrappers and filling ingredients.

For the Dipping Sauce:

  1. In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, honey, rice vinegar, and minced garlic until smooth. If the sauce is too thick, you can add 1-2 tablespoons of water to thin it out to your desired consistency.
