◾ 1 tablespoon 3 cups vegetable broth
◾1 cup heavy cream
◾1/4 cup fresh lime juice
◾1/2 cup packed fresh cilantro
◾1 jalapeno, seeded (optional)
◾1/2 teaspoon vegetable oil
◾1 medium yellow onion, diced
DIRECTIONS to Avocado Soup
1. Heat oil in a medium skillet over medium heat.
2. Add four ripe Haas avocados, pitted and peeled, ground cumin, Kosher salt, hot sauce, crumbled cotija cheese, crushed tortilla chips, and chopped cilantro for serving.Onion and garlic should be added to the shimmering oil.
3. Cook, occasionally stirring, for about 5 minutes until the onion is soft.Take off the heat.
4. Blend avocados, sautéed onion and garlic, broth, cream, lime juice, cumin, 1 teaspoon kosher salt, cilantro, jalapeno, and cumin.
5. Blend on high for about two minutes or until smooth.
6. To taste, season with salt.You can either serve it right away at room temperature or chill it for up to four hours before serving.
7. Serve with tortilla chips, cilantro, hot sauce, and cotija on top.
