Apple Cinnamon Cake (Soft & Moist)

For the Apple Layer:

3 medium apples (peeled, cored, diced or thinly sliced)

1β2 tbsp sugar

1 tsp cinnamon
-
1 tsp lemon juice (prevents browning)
For the Cake Batter:

3 eggs (room temperature)
-
75 g sugar (about β cup)

8 g vanilla sugar (or 1 tsp vanilla extract)

150 g all-purpose flour (1ΒΌ cups)

10 g baking powder (2 tsp)

100 g melted butter (Β½ cup)

β Step 1: Prepare the Apples

Peel and cut apples into small cubes or thin slices.

Put them in a bowl.

Add:

Sugar
-
Cinnamon
-
Lemon juice
-

Mix gently and set aside.
β Step 2: Prepare the Cake Batter

In a mixing bowl, add eggs + sugar + vanilla sugar.

Beat with a whisk or mixer for 2β3 minutes until light and fluffy.

Add melted butter and mix well.

In another bowl, combine:

Flour
-
Baking powder

Gradually add dry ingredients into wet mixture.

Mix gently until smooth (do NOT overmix).
β Step 3: Assemble the Cake

Line a round cake pan (20β22 cm) with parchment paper or grease it.

Spread the prepared apples evenly in the bottom of the pan.

Pour the cake batter over the apples.

Smooth the top with a spatula.

Preheat oven to 170Β°C (340Β°F).
