Ingredients
• 1 lb ground beef
• 1 tbsp olive oil (if needed)
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 cup cauliflower florets, finely chopped (rice-sized)
• 1/2 cup diced bell peppers
• 1/2 cup diced tomatoes (no added sugar)
• 1/2 cup sliced black olives
• 1 tsp chili powder
• 1 tsp cumin
• 1/2 tsp smoked paprika
• Salt and black pepper, to taste
• 1 cup shredded cheddar cheese
• 1 cup shredded mozzarella or Monterey Jack
• 1/2 cup sour cream
• 1/2 cup cream cheese, softened
• Optional toppings: jalapeños, green onions, fresh cilantro
Instructions
Preheat oven to 180°C / 350°F. Grease a casserole dish.
Heat oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
Add onion and garlic; sauté until softened.
Stir in cauliflower, bell peppers, tomatoes, and olives. Cook for 3–4 minutes until slightly tender.
Season with chili powder, cumin, smoked paprika, salt, and pepper.
Reduce heat and mix in sour cream and cream cheese until creamy and well combined.
Transfer mixture to prepared casserole dish.
Sprinkle cheddar and mozzarella evenly over the top.
Bake uncovered for 20–25 minutes until bubbly and golden on top.
Let rest for 5 minutes before serving.
Serving suggestions
Serve with avocado slices, a simple lettuce salad, or keto tortilla chips. This casserole is ultra-creamy, cheesy, comforting, and perfect for meal prep.
