Savory Stuffed Eggplants

Ingredients
For the Eggplant Base:

2 medium eggplants (approx. 600g total)

2 tbsp olive oil (30ml)

¼ tsp black pepper

½ tsp sweet paprika

½ tsp dried oregano
For the Savory Filling:

250g minced meat (beef, turkey, or lamb)

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup tomato sauce or crushed tomatoes

½ cup shredded mozzarella or parmesan cheese

Instructions
Step 1: Prepare the Eggplants

Wash the eggplants and slice them lengthwise into halves.

Score the flesh in a diamond pattern with a knife, being careful not to cut through the skin. This helps the flavors penetrate.

In a small bowl, mix olive oil, salt, black pepper, sweet paprika, and dried oregano.

Brush the seasoned oil generously over the cut sides of the eggplants.
Step 2: Initial Roast

Preheat the oven to 200°C (400°F).

Place the eggplants on a baking sheet, cut side up, and bake for 20 minutes or until the flesh is soft and lightly browned.
Step 3: Make the Filling

While the eggplants roast, heat a skillet over medium heat.

Add the minced meat and cook until fully browned. Drain any excess fat if necessary.

Add the onion, garlic, and red bell pepper. Sauté for 5 minutes until softened and fragrant.

Stir in the tomato sauce, and let the mixture simmer for a few minutes until it thickens slightly.

Taste and adjust seasoning with additional salt or pepper if needed.

Step 4: Stuff the Eggplants

Remove the eggplants from the oven.

Use a spoon to gently press down the centers to create a well for the filling.

Spoon the meat mixture into the centers evenly.

Top each eggplant half with a generous layer of shredded cheese.
Step 5: Final Bake

Return the stuffed eggplants to the oven for 10–15 minutes, or until the cheese is melted, bubbly, and golden brown.
