Loaded Broccoli Cauliflower Salad (Low Carb)!!!

Ingredients

Salad

 

3 cups fresh broccoli florets (bite-sized)

 

3 cups fresh cauliflower florets (bite-sized)

 

1 cup shredded sharp cheddar cheese (or cubed for extra texture)

 

6 slices bacon, cooked crispy and crumbled

 

¼ cup red onion, finely diced

 

2 tablespoons chives or green onions (optional)

 

Creamy Dressing

 

¾ cup mayonnaise (or avocado oil mayo)

 

¼ cup sour cream

 

1 tablespoon apple cider vinegar (or lemon juice)

 

1 teaspoon Dijon mustard

 

½ teaspoon garlic powder

 

Salt & black pepper, to taste

Prep the Veggies

Wash and dry broccoli and cauliflower thoroughly. Cut into small, bite-sized florets.

 

Cook the Bacon

Cook bacon until crispy. Drain, cool, and crumble.

 

Make the Dressing

In a bowl, whisk together mayonnaise, sour cream, vinegar, Dijon mustard, garlic powder, salt, and pepper until smooth.

 

Assemble the Salad

In a large bowl, combine broccoli, cauliflower, cheddar cheese, bacon, red onion, and chives.

 

Toss & Chill

Pour dressing over the salad and toss until well coated. Refrigerate for at least 30 minutes before serving for best flavor.
