Simple Ground Turkey Shepherd’s Pie
This recipe is a twist on the classic shepherd’s pie, using ground turkey for a lighter option. It’s simple to make and perfect for a comforting meal.
Ingredients:
- Filling:
- 1 tablespoon olive oil
- 1 pound ground turkey (90% lean or higher)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can corn, drained
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- Mashed Potatoes:
- 4-5 medium potatoes, peeled and cubed
- 1/2 cup milk (or more for desired consistency)
- 2 tablespoons butter
- 1/4 cup chopped fresh parsley (optional)

Instructions:
- Make the filling: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for another minute.
- Increase heat to medium-high and add ground turkey. Break it up with a spoon as it cooks until browned throughout.
- Drain any excess fat from the pan. Stir in corn, thyme, salt, and pepper.
- Make the mashed potatoes: While the filling cooks, boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain well and return to the pot.
- Mash potatoes with a potato masher or hand mixer. Add milk, butter, parsley (if using), salt, and pepper until desired consistency is reached.
- Assemble the pie: Preheat oven to 375°F (190°C). Transfer the meat filling to a baking dish. Top with mashed potatoes, spreading evenly to cover the filling.
- Bake for 20-25 minutes, or until the edges are golden brown and the filling is bubbly.
