1 cup heavy cream
2 tbsp sugar-free powdered sugar
1/4 tsp xanthan gum
1 tsp vanilla extract
Method:
In a wide jar, add all your ingredients and mix them. Using a stick mixer, beat everything together until it thickens and soft peaks form. Place it in the freezer for at least 4 hours. Mix it every 40 minutes to ensure it doesn’t become too icy. Remove from the freezer and let sit for 10 minutes before serving.
