Strawberry Swirl Loaf

For the strawberry swirl:

Ingredients:

  •  1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

For the bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/4 cup milk

Instructions:

  1. Preheat oven and prepare loaf pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
  2. Prepare the strawberry swirl: In a small saucepan, combine chopped strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries break down and the mixture thickens slightly, about 8-10 minutes. Remove from heat and let it cool.
  3. Make the bread batter: In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream together softened butter and sugar until light and fluffy using a hand mixer or stand mixer. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

  7. Bake the loaf: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
