Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for coating
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped nuts (walnuts or pecans work well)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.
- In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
- Stir in the finely chopped nuts until evenly distributed throughout the dough.
- Shape the dough into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each.
- Bake in the preheated oven for about 12-15 minutes or until the bottoms are lightly golden. Be careful not to overbake; you want them to remain pale on top.
- Remove the cookies from the oven and allow them to cool for a few minutes. While still warm, gently roll each cookie in powdered sugar until coated. Place them on a wire rack to cool completely.
- Once cooled, roll the cookies in powdered sugar again for an extra snowy effect.
- Store the snowball cookies in an airtight container, and try not to devour them all in one sitting (no promises!).
