Snowball Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped nuts (walnuts or pecans work well)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  4. Stir in the finely chopped nuts until evenly distributed throughout the dough.
  5. Shape the dough into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each.
  6. Bake in the preheated oven for about 12-15 minutes or until the bottoms are lightly golden. Be careful not to overbake; you want them to remain pale on top.
  7. Remove the cookies from the oven and allow them to cool for a few minutes. While still warm, gently roll each cookie in powdered sugar until coated. Place them on a wire rack to cool completely.
  8. Once cooled, roll the cookies in powdered sugar again for an extra snowy effect.
  9. Store the snowball cookies in an airtight container, and try not to devour them all in one sitting (no promises!).
