Italian Drunken Noodles


Ingredients:

  • 8 oz fettuccine or pappardelle noodles
  • 2 tablespoons olive oil
  • 1 lb Italian sausage, casings removed
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry red wine (like Chianti)
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through.
  3. Add the sliced onion and minced garlic to the skillet. Sauté until the onion is translucent.
  4. Stir in the bell pepper and cherry tomatoes. Cook for 2-3 minutes until the vegetables are slightly softened.
  5. Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
  6. Season with dried oregano, dried basil, salt, and black pepper. Let the mixture simmer for 5-7 minutes.
  7. Add the cooked pasta to the skillet and toss to coat in the flavorful sauce.
  8. Serve hot, garnished with grated Parmesan cheese and fresh basil.
