Malva Pudding

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 large egg
  • 1 tablespoon apricot jam
  • 1 tablespoon melted butter
  • 1 teaspoon vinegar
  • 1 cup milk

For the Sauce:

  • 1 cup heavy cream
  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease a baking dish.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and a pinch of salt.
  3. In a separate bowl, beat the egg and add apricot jam, melted butter, vinegar, and milk. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the greased baking dish and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, prepare the sauce. In a saucepan, combine heavy cream, sugar, butter, hot water, and vanilla extract. Bring to a gentle boil, stirring continuously until the sugar has dissolved.
  7. Once the pudding is out of the oven, immediately pour the hot sauce over it, allowing it to soak in.
  8. Allow the Malva Pudding to rest for a few minutes before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
