Caprese Stuffed Avocados

 

Ingredients:

  • 4 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, cut into halves or quarters
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra-virgin olive oil
  • Balsamic glaze, for drizzling
  • Salt and pepper, to taste

Instructions:

  1. Scoop out some flesh from each avocado half to create a larger well for the stuffing.
  2. In a bowl, combine cherry tomatoes, mozzarella, and torn basil leaves.
  3. Drizzle extra-virgin olive oil over the tomato, mozzarella, and basil mixture. Gently toss to coat, and season with salt and pepper.
  4. Spoon the tomato and mozzarella mixture into the hollowed-out avocados.
  5. Drizzle balsamic glaze over the stuffed avocados for a burst of flavor.
  6. Serve immediately, and enjoy this refreshing and satisfying dish!
