Recipe: Chocolate Raspberry Tart

Ingredients:

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 cup dark chocolate, chopped
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

For the Raspberry Topping:

  • 2 cups fresh raspberries
  • 2 tbsp raspberry jam, melted

Instructions:

  1. Prepare the Crust:
    • In a bowl, mix chocolate cookie crumbs and melted butter until well combined.
    • Press the mixture into the bottom and up the sides of a tart pan. Chill in the refrigerator for 30 minutes.
  2. Make the Chocolate Filling:
    • In a heatproof bowl, combine chopped dark chocolate, heavy cream, vanilla extract, and a pinch of salt.
    • Heat over a double boiler or in the microwave in 20-second intervals until chocolate is melted. Stir until smooth.
    • Pour the chocolate filling into the chilled crust and spread it evenly. Refrigerate for at least 1 hour to set.
  3. Top with Raspberries:
    • Arrange fresh raspberries on top of the chocolate filling.
  4. Add Raspberry Glaze:
    • Heat raspberry jam until melted and smooth. Brush the melted jam over the raspberries for a glossy finish.
