Recipe: Chocolate Raspberry Tart
Ingredients:
For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
For the Filling:
- 1 cup dark chocolate, chopped
- 1 cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
For the Raspberry Topping:
- 2 cups fresh raspberries
- 2 tbsp raspberry jam, melted
Instructions:
- Prepare the Crust:
- In a bowl, mix chocolate cookie crumbs and melted butter until well combined.
- Press the mixture into the bottom and up the sides of a tart pan. Chill in the refrigerator for 30 minutes.
- Make the Chocolate Filling:
- In a heatproof bowl, combine chopped dark chocolate, heavy cream, vanilla extract, and a pinch of salt.
- Heat over a double boiler or in the microwave in 20-second intervals until chocolate is melted. Stir until smooth.
- Pour the chocolate filling into the chilled crust and spread it evenly. Refrigerate for at least 1 hour to set.
- Top with Raspberries:
- Arrange fresh raspberries on top of the chocolate filling.
- Add Raspberry Glaze:
- Heat raspberry jam until melted and smooth. Brush the melted jam over the raspberries for a glossy finish.
