Peaches & Cream Loaf Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 1/2 cups fresh peaches, peeled and chopped
  • 1/2 cup cream cheese, softened

Cream Filling:

  • 1/2 cup cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter & Sugar: In a large bowl, beat the butter and 1 cup sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
  4. Combine with Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with sour cream and milk. Stir just until combined. Fold in the chopped peaches.
  5. Prepare Cream Filling: In a separate bowl, beat together 1/2 cup cream cheese, 1/4 cup sugar, 1 egg, and 1/2 teaspoon vanilla extract until smooth.
  6. Assemble the Loaf: Pour half of the batter into the prepared pan. Spread the cream cheese filling evenly over the batter. Top with the remaining batter.
  7. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool & Serve: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
