Ingredients:

For the Meat Marinade:

  • 2 pounds of boneless lamb or beef (or a combination of both)
  • 2 onions, grated
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste

For Cooking and Serving:

  • Large metal skewer or rotisserie spit
  • Pita bread or flatbread
  • Sliced tomatoes, onions, and cucumbers
  • Fresh lettuce or cabbage
  • Tzatziki sauce or tahini sauce

Instructions:

  1. Start by slicing the meat thinly. You can use a sharp knife or partially freeze the meat for easier slicing. Make sure the slices are about 1/4 inch thick.
  2. In a large bowl, combine all the marinade ingredients: grated onions, minced garlic, olive oil, yogurt, cumin, paprika, coriander, cinnamon, cayenne pepper, salt, and pepper. Mix well.
  3. Add the thinly sliced meat to the marinade mixture. Make sure all the meat slices are coated evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.
