Egg Salad Plate
Creamy Mediterranean Egg Salad
Ingredients
6 hard-boiled eggs (4 chopped, 2 sliced for serving)
¼ cup plain Greek yogurt
1–2 tbsp olive oil
1 tsp Dijon mustard (optional but nice)
1 tbsp fresh lemon juice
1 small garlic clove, grated
2 tbsp finely chopped red onion
1 tbsp chopped fresh parsley
1 tbsp chopped fresh dill (optional but very Mediterranean)
Salt & black pepper to taste
Pinch of paprika or sumac (optional)
Instructions
Make the dressing
In a bowl mix Greek yogurt, olive oil, lemon juice, garlic, mustard, salt, and pepper.
Combine
Fold in chopped eggs, red onion, parsley, and dill.
Adjust salt and lemon to taste.
Plate Mediterranean-style
Spoon into a bowl and drizzle with olive oil.
Sprinkle with black pepper and paprika or sumac.
