Creamy Tuscan “Marry Me” Butter Beans
Ingredients
For the Beans
- 2 cups cooked butter beans (canned, drained and rinsed)
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 small shallot, finely diced
- 1 tsp dried oregano
- ½ tsp crushed red pepper flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
For the Creamy Sauce
- ½ cup heavy cream or coconut cream for lighter version
- ¼ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 1 cup fresh baby spinach
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Optional Garnish
- Fresh basil leaves
- Drizzle of olive oil
Directions
1. Sauté Aromatics:
Heat olive oil in a large skillet over medium heat.
Add shallot and garlic; sauté 2–3 minutes until fragrant and softened.
Stir in oregano, red pepper flakes, salt, and black pepper.
2. Add Butter Beans:
Add butter beans to the skillet and stir to coat in the aromatics. Cook 2–3 minutes.
3. Make the Creamy Sauce:
Pour in heavy cream and stir.
Add Parmesan cheese and sun-dried tomatoes. Simmer gently 3–5 minutes until sauce thickens slightly.
Stir in baby spinach and lemon zest until spinach wilts.
4. Serve:
Transfer to bowls and garnish with chopped parsley, fresh basil, and a drizzle of olive oil. Serve warm with crusty bread or over rice/quinoa.
