6 large eggs
½ cup milk (or unsweetened almond milk for low-carb)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
VEGETABLES & ADD-INS
1 ½ cups fresh spinach (chopped) or ¾ cup frozen spinach (thawed and squeezed dry)
1 cup mushrooms, sliced
½ cup red or green bell pepper, diced
¼ cup onions, finely chopped (optional)
½ cup cooked turkey or diced ham (optional for added protein)
CHEESE
1 cup shredded mozzarella cheese (or a mix of cheddar and Swiss for more flavor)
FOR GREASING
1 teaspoon olive oil or butter
INSTRUCTIONS
Preheat Oven:
Preheat your oven to 375°F (190°C).
Grease a 9-inch pie dish or baking pan lightly with olive oil or butter.
Cook the Vegetables:
In a skillet, heat a small amount of olive oil over medium heat.
Add mushrooms, onions, and bell peppers. Sauté for 4–5 minutes until softened.
Add the spinach and cook until wilted. Remove from heat and let cool slightly.
Prepare the Egg Mixture:
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
Assemble the Dish:
Add the cooked vegetables and any optional diced ham/turkey to the egg mixture. Stir to combine.
Pour the mixture into the greased baking dish.
Sprinkle shredded cheese evenly over the top.
Bake:
Bake uncovered for 30–35 minutes, or until the center is set and the top is golden.
To test doneness, insert a knife in the center — it should come out clean.
Cool and Serve:
Let it rest for 5–10 minutes before slicing into wedges.
