Flourless Blueberry Banana Bread

3 pieces ripe bananas, mashed (about 400g) The riper the bananas, the sweeter the bread.
1 cup crunchy peanut butter (about 250g) Smooth peanut butter can be used if preferred.
1 tsp vanilla extract
2 pieces eggs Can be replaced with flax eggs for a vegan version.
1 tsp baking powder
1/2 cup fresh blueberries (about 75g) Plus a handful for topping.
Method
Preparation
Preheat your oven to 350°F (or 320°F for a fan oven).
Spray a loaf pan with cooking oil or coat it with butter to prevent sticking.
In a large bowl, mash the ripe bananas. Add the crunchy peanut butter, vanilla extract, and eggs. Mix until smooth.
Stir in the baking powder.
Gently fold the fresh blueberries into the batter.
Pour the mixture into the prepared loaf pan and top with a handful of extra blueberries.
Baking
Bake in the preheated oven for 50-55 minutes. Cover with aluminum foil if the top starts to brown too quickly.
Check for doneness with a toothpick; if it comes out clean, the bread is ready.
Let it cool in the pan before transferring it to a wire rack.
Notes
Serve warm or at room temperature; delicious with butter or yogurt. Great paired with tea or coffee. For longer storage, slice and freeze individual pieces.
