- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Avocado Salsa
- 2 ripe avocados, diced
- 1 cup diced tomatoes
- ¼ cup red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
Marinate the Chicken
In a bowl, whisk olive oil, lime juice, zest, and all spices. Coat chicken evenly.
Marinate at least 20 minutes (up to 2 hours for deeper flavor).
Cook the Chicken
Heat a skillet or grill pan over medium-high heat.
Cook chicken 5–6 minutes per side until golden and internal temp reaches 165°F (74°C).
Remove and rest for 5 minutes.
Make the Avocado Salsa
Gently mix avocados, tomatoes, onion, cilantro, lime juice, and salt. Taste and adjust.
Serve
Top warm chicken with generous spoonfuls of avocado salsa.
Serve with rice, tortillas, or a crisp salad.
Notes
- Chicken thighs work great if you want extra juiciness
- Let the chicken rest before topping so juices stay locked in
- Best enjoyed fresh, but leftovers keep well
Tips for Best Flavor
