Creamy Spinach & Bacon Chicken

Vegetables 3 cups Fresh Spinach, 3 cloves Garlic (minced)

The Sauce 1 cup Heavy Cream, ½ cup Parmesan cheese, ½ tsp Onion powder

Pantry/Garnish Olive oil, Salt & Pepper, Fresh Parsley (chopped)

Instructions

Crisp the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and set it aside on a paper towel to drain. Once cool, crumble it into bits. Keep about 1 tbsp of the bacon fat in the pan for extra flavor.

 

Sear the Chicken: Season your chicken breasts generously with salt, pepper, and onion powder. In the same skillet, cook the chicken for 5-7 minutes per side until golden brown and cooked through. Remove from the pan and let it rest for a few minutes before slicing.

 

Sauté the Spinach: In the remaining pan juices, add the minced garlic and sauté for 1 minute until fragrant. Toss in the fresh spinach and cook just until it wilts (about 2 minutes). Remove the spinach from the pan and set it as a “bed” on your serving plate.

 

Make the Cream Sauce: Lower the heat. Pour the heavy cream into the skillet, scraping up any browned bits from the chicken. Let it simmer for 2-3 minutes until it begins to thicken slightly. Stir in the Parmesan cheese until melted and smooth.

 

Assemble: Place the sliced chicken over the bed of spinach. Pour the warm cream sauce generously over the top.

 

The Finishing Touch: Garnish with the crumbled bacon and fresh parsley as seen in your photo.

 

Tips for Success

Don’t Overcrowd: If you are doubling the recipe, cook the chicken in batches so it sears rather than steams.

 

Sauce Consistency: If the sauce gets too thick, add a splash of chicken broth or water to thin it out.
