Tropical Sunrise Layered Smoothie

Ingredients

The Pink Layer (Bottom)

 

1 cup frozen pitaya (dragon fruit) chunks or 1 packet of frozen pitaya puree

 

1/2 cup frozen raspberries or strawberries

 

1/2 cup coconut water or apple juice

 

A squeeze of lime juice

 

The Yellow Layer (Top)

 

1 cup frozen mango chunks

 

1 cup frozen pineapple chunks

 

1/2 cup coconut milk (from a carton for creaminess)

 

1/2 frozen banana (optional, for extra thickness)

 

Toppings (As shown in image)

 

Fresh pineapple chunks (skewered)

 

Fresh kiwi slices

 

A sprinkle of granola or toasted coconut

 

Fresh pineapple leaves (for garnish)

 

Instructions

Blend the Pink Base: Add all ingredients for the pink layer into a blender. Blend until completely smooth and thick.

 

Tip: Use as little liquid as possible to keep it thick so the layers don’t mix immediately.

 

Pour: Divide the pink mixture between two tall glasses, filling them about halfway. Rinse the blender well.

 

Blend the Yellow Top: Add the yellow layer ingredients to the blender. Blend until smooth.

 

Layering: Carefully spoon the yellow mixture over the pink layer. To get that “swirl” effect seen in the photo, take a long spoon or straw and gently pull a bit of the pink layer upward into the yellow.

 

Garnish: Top with granola and a slice of kiwi. Skewer a few pineapple chunks and place them in the glass.
