INGREDIENTS:

4 Boneless, skinless chicken breasts

2 tbsp Olive oil

1 Onion (thinly sliced) & 4 cloves Garlic (minced)

1 cup Cherry tomatoes (halved)

½ cup Black olives (sliced)

½ cup Artichoke hearts (quartered)

2 tbsp Capers (optional, but highly recommended!)

½ cup Chicken broth
-
1 tsp Oregano, salt, pepper, & red pepper flakes

Fresh basil/parsley & Lemon wedges
INSTRUCTIONS: 1️⃣ Sear: Season chicken with salt, pepper, and oregano. Sear in olive oil over medium-high heat for 3-4 mins per side until golden. Remove chicken and set aside. 2️⃣ Sauté: In the same pan, sauté onions until soft. Add garlic for 30 seconds. Stir in tomatoes, olives, artichokes, and capers. 3️⃣ Simmer: Pour in the chicken broth, scraping the bottom of the pan to get all those flavorful browned bits. Let it simmer for 2-3 mins. 4️⃣ Finish: Return chicken to the pan. Cover and cook for 5-7 mins until chicken is cooked through (165°F/74°C). 5️⃣ Serve: Top with fresh herbs and a squeeze of lemon.
