Carrot Soup

 

Ingredients:

1 tablespoon olive oil

1 onion, chopped

2 garlic cloves, minced

1 lb (about 4–5) carrots, peeled and sliced

4 cups vegetable or chicken stock

½ teaspoon salt (more to taste)

¼ teaspoon black pepper

½ teaspoon ground ginger or 1 teaspoon fresh grated (optional)

½ cup cream or coconut milk (optional)

fresh parsley or chives (optional garnish)

 

Instructions:

 

1. Heat olive oil in a pot over medium heat.

2. Add onion and cook until soft.

3. Add garlic and carrots and stir a minute.

4. Pour in stock, salt, pepper, and ginger.

5. Bring to a boil, then reduce heat and simmer until carrots are very tender.

6. Use a blender or stick blender to puree the soup until smooth.

7. Stir in cream or coconut milk if using; heat through.

8. Taste and adjust seasoning.

9. Serve warm with parsley or chives on top.
