Ingredients
_ Protein: 1 medium chicken breast (seasoned with sea salt, cracked black pepper, and garlic powder) + 2 large hard-boiled eggs (halved).
_ Grains & Greens: 1 cup cooked tri-color or white quinoa + 1.5 cups mixed baby greens (spinach, kale, or romaine).
_ Fresh Produce: ½ ripe avocado (sliced), ½ cup English cucumber (thinly sliced), and 6 cherry tomatoes (halved).
_ Crunch & Dressing: 1 tbsp raw sunflower seeds + a drizzle of extra virgin olive oil and a squeeze of fresh lemon juice.
Instructions:
1. Prepare the quinoa and boil eggs until firm (approx. 9 mins).
2. Grill the chicken with salt and pepper until cooked through.
3. Fill a bowl with greens, then layer the quinoa, sliced chicken, eggs, and veggies.
4. Top with sunflower seeds and a drizzle of olive oil.
