Ingredients
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp instant yeast
- 1 tbsp olive oil
- 1 cup warm water (plus 2โ3 tbsp if needed)
Instructions
1. Make the Dough
- In a bowl, mix flour, salt, sugar, and yeast.
- Add olive oil and warm water.
- Knead 8โ10 minutes until smooth and soft.
- Cover and let rise 1 hour (until doubled).
2. Shape
- Divide into 8 balls.
- Roll each into a thin circle (about 6โ7 inches).
3. Cook
- Heat a dry pan on medium-high.
- Place dough circle in pan.
- Cook until bubbles form โ flip.
- It should puff up and make a pocket.
- Cook 1 more minute until lightly golden.
Stack in a towel to keep soft.

ย Pan must be hot
ย Roll evenly (not too thick)

No-Yeast Quick Version
Replace yeast + sugar with:
- 1 tsp baking powder
- ยพ cup yogurt + ยผ cup water
Rest dough 15 minutes, then cook.
