Queso Cheese Sauce

  • 1¼ cups milk

  • 1 cup shredded cheddar cheese

  • ½ cup shredded Monterey Jack cheese

  • 1 tbsp cream cheese (optional, for extra creaminess)

  • ¼ tsp salt

  • 1 tbsp diced green chiles (optional)

Enchiladas

  • 8–10 small flour or corn tortillas

  • ½ cup extra shredded cheese (for topping)

👩‍🍳 Instructions

1️⃣ Preheat Oven

Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.


2️⃣ Prepare Chicken Filling

Heat olive oil in a skillet over medium heat.
Sauté onion and garlic until soft (about 3 minutes).
Add shredded chicken, cumin, chili powder, paprika, salt, and pepper.
