- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 garlic clove (finely minced or grated)
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- (Optional) Juice of 1/2 lemon

- Add all ingredients into a jar with a tight lid.
- Close the lid and shake well for 20β30 seconds until mixed and slightly thick.
- Taste and adjust:
- Add more salt or pepper if needed
- Add lemon juice for extra freshness
- Use immediately or store in the fridge.

- Olive oil may harden when cold β just:
- Leave it at room temperature for a few minutes
- Shake again before using
