Soft, lightly sweet, and perfect with tea — this recipe has been a go-to in many homes because it’s simple, affordable, and blood-sugar conscious.
 Ingredients:
- 1 cup plain Greek yogurt (full-fat or low-fat)
- 3 large eggs
- ½ cup almond flour
- ÂĽ cup granulated erythritol or monk fruit sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Zest of 1 lemon (optional, but recommended)
- Pinch of salt
 Instructions:
- Preheat oven to 170°C (340°F). Grease or line a small 6–7 inch baking pan.
- Mix wet ingredients
In a bowl, whisk together yogurt, eggs, vanilla, and sweetener until smooth. - Add dry ingredients
Stir in almond flour, baking powder, salt, and lemon zest. Mix until fully combined. - Bake
Pour batter into prepared pan and smooth the top.
Bake for 30–35 minutes, or until the center is set and a toothpick comes out clean. - Cool completely
Let it cool before slicing — this helps it firm up nicely.
 Optional Add-Ins:
- A handful of fresh berries folded into the batter
- Sprinkle sliced almonds on top
- Dust lightly with powdered erythritol
