ππ° Pineapple Cake with Pine Pineapple Frosting
A soft, moist tropical cake made with real pineapple and topped with a sweet, zingy pineapple frosting β pure sunshine in every bite βοΈ
π Ingredients
π§ For the Cake
1Β½ cups all-purpose flour
1 tsp baking powder
Β½ tsp baking soda
ΒΌ tsp salt
ΒΎ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 (8 oz) can crushed pineapple, drained
(Save 2 tbsp juice for frosting)
π For the Pineapple Frosting
ΒΌ cup unsalted butter, softened
2 cups powdered sugar
1β2 tbsp crushed pineapple juice (reserved)
Β½ tsp vanilla extract
β¨ Optional Garnish
Fresh pineapple chunks
Maraschino cherries
π©βπ³ Instructions
π₯ Step 1: Preheat & Prepare
Preheat oven to 350Β°F (175Β°C)
Grease & flour:
Two 8-inch round pans, or
One 9Γ13-inch pan
π₯£ Step 2: Mix Dry Ingredients
In a medium bowl, whisk together:
Flour
Baking powder
Baking soda
Salt
Set aside.
π§ Step 3: Cream Butter & Sugar
In a large bowl:
Beat butter & sugar until light and fluffy (2β3 minutes).
π₯ Step 4: Add Eggs & Vanilla
Add eggs one at a time, mixing well.
Stir in vanilla extract.
π Step 5: Combine Wet & Dry
Add dry ingredients in three parts, alternating with small amounts of pineapple.
Mix until just combined β donβt overmix.
π Step 6: Fold in Pineapple
Gently fold in drained crushed pineapple until evenly mixed.
π₯ Step 7: Bake
Divide batter into pans.
Bake 25β30 minutes, until a toothpick comes out clean.
Cool 10 minutes in pans, then transfer to a wire rack to cool completely.
π¨ Step 8: Make the Frosting
Beat butter until creamy.
Gradually add powdered sugar.
Add pineapple juice & vanilla.
Beat until smooth and fluffy.
π Step 9: Frost & Decorate
Frost completely cooled cake.
Garnish with pineapple chunks or cherries for a tropical finish ππ
