Ingredients (4 servings)
- 2 cups broccoli florets
- 1 zucchini, sliced
- 1 carrot, sliced thin
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 cup low-fat cottage cheese or Greek yogurt
- ½ cup shredded low-fat mozzarella
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp oregano or Italian seasoning
Instructions
Preheat oven to 180°C (350°F).
Sauté veggies
Heat olive oil in a pan. Add onion, garlic, carrot, zucchini, and pepper. Cook 5 minutes.
Mix casserole
Add broccoli and tomatoes. Season with salt, pepper, oregano.
Stir in cottage cheese or yogurt.
Bake
Transfer to baking dish. Sprinkle mozzarella on top.
Bake 25–30 minutes until bubbly and golden.
Rest & Serve
Let sit 5–10 minutes before serving.
